Seeing as today is the first day of Spring, and Mother Nature is sleeping in, I decided to bring a little Sunshine to our lunch table in the form of a bright, tart Lemon Vinaigrette. Paired with Smoked Salmon, this dish takes just minutes to prep and has become one of my ultimate Kitchen Shortcuts.
Smoked Salmon and Lemon Vinaigrette
- Zest and Juice from 1 Lemon
- 1/2 Cup Olive Oil
- Pinch of Sugar
- Salt and Pepper to taste
- Smoked Salmon
- Clean Lemon well and zest it
- Cut Lemon in half and juice it into a small bowl
- Add zest plus remaining ingredients
- Whisk together
- Lay Smoked Salmon on a dish and drizzle with Lemon Vinaigrette
That’s it in my house. You can dress it up further with minced shallots or a bit of Dijon as an emulsifier if you like. Honestly, the lemon brilliance shines perfectly on it’s own, especially when paired with the grounded flavors of Smoked Salmon. Simply plate the Salmon dress with the vinaigrette and if you’ve got it, top with a little Basil Chiffonade for color.
As simple as it gets and as eagerly awaited in my home as Spring.
